Mushroom Bacon Breakfast Bake

Ingredients

  • 8 slices bacon
  • 2 Tbsp. butter
  • half punnet sliced mushrooms
  • Flippen Lekka Spice to taste
  • 6 slices sandwich bread
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 1-1/2 cups milk

Method

  1. Fry bacon until crisp
  2. Melt 1 Tbsp. butter in a pan
  3. Add mushrooms
  4. Cook until browned
  5. Season with Flippen Lekka Spice
  6. Butter a baking dish with the remaining tablespoon of butter
  7. Lay bread in baking dish in an even layer
  8. Top with mushrooms
  9. Crumble bacon over mushrooms
  10. Sprinkle cheese on top
  11. Beat eggs, milk and Flippen Lekka Spice together
  12. Pour evenly over cheese, making sure to cover all of the bread
  13. Preheat oven to 180 degrees C
  14. Bake breakfast casserole 40 minutes or until golden and slightly puffy
