Butternut & Feta Soup

Ingredients
- 1 kg butternut peeled and chopped
- 2 potatoes peeled and cubed
- 2 leeks
- 1 large onion
- 1/2 tsp mild curry powder
- 750 ml chicken stock
- 1/2 tsp fine nutmeg
- 1 tsp Flippen Lekka Spice
- 250ml fresh cream
- feta cheese
Method
- Dice the leeks and onion and fry in olive oil on medium temperature
- Add the curry powder and Flippen Lekka Spice and allow the onions to absorb the curry & spice flavours for a few minutes
- Add the diced butternut and potato and stir to coat with oil
- Add stock and let the butternut simmer gently until very soft
- Add the nutmeg and blitz the soup with a stick blender
- Return to a very low heat just to keep it warm
- Add the cream and stir through just before serving
- Garnish with crumbed feta
