Cheesy Cottage Pie

Ingredients

  • I Large onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 large carrot, finely chopped
  • 750g minced beef
  • 2 tsp flour
  • 300ml beef stock
  • 1 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • Flippen Lekka Spice to taste
  • 150g mature cheddar cheese, grated
  • 750g mashed potatoes

Method

  1. In a large saucepan, fry the onion, celery and carrot in a little oil for 3 minutes
  2. Add the minced beef and fry until brown
  3. Add the flour and continue stirring for 1 min
  4. Add the stock, tomato paste, Worcestershire sauce and spices and bring to a boil
  5. Cover and simmer for 40 min, stirring occasionally
  6. Add the cheese and a dash of Flippen Lekka Spice to the mash and stir through
  7. Transfer the mince mixture to an ovenproof dish and top with the potato mixture
  8. Place in a preheated oven at 200 degrees C for 20 mins until the potato topping is golden brown
