Creamy Corn Gem Squash

Ingredients

  • 2 gem squashes, halved and seeds removed
  • 1 large egg
  • 100ml fresh cream
  • pinch of grated nutmeg
  • 1/4 tsp ground pepper
  • a pinch of Flippen Lekka Spice
  • 2 tbsp of finely chopped spring onions
  • 1 cup of corn kernels
  • 1/4 cup grated cheddar cheese

Method

  1. Preheat oven to 200 degrees C
  2. Place the squash halves on a roasting pan and roast for 30 minutes until the flesh is tender
  3. While the squash halves are roasting, prepare the filling
  4. In a large measuring cup, mix together egg, cream, nutmeg, pepper, Flippen Lekka Spice and spring onions
  5. Remove squash halves from the oven and fill them with corn kernels until almost full
  6. Reduce oven temperature to 180 degrees C
  7. Fill each of the squash halves with the filling
  8. Bake for 15-20 minutes until filling is set
  9. Remove from oven and top with grated cheddar cheese
  10. Set oven to grill and grill until the cheese is bubbling and golden brown
  11. Garnish with chopped spring onions
