Bacon, Butternut & Spinach Pasta

Ingredients

  • 250g Sliced Bacon
  • 15ml Olive oil
  • 1 small butternut, peeled and cubed
  • Pasta of your choice
  • 100g baby spinach, rinsed
  • Flippen Lekka Spice to taste
  • Feta cheese to garnish

Method

  1. Preheat oven to 200 degrees C
  2. Season Butternut with Flippen Lekka Spice and place on oven tray and drizzle with olive oil
  3. Toss to coat evenly then roast until tender and slightly caramelised (25 to 30 mins)
  4. Cook pasta according to packaging instructions
  5. In a frying pan, cook bacon until crispy, add spinach and cook slightly until the spinach wilts
  6. Add the roasted butternut and season again with Flippen Lekka Spice
  7. Toss together with cooked pasta and drizzle with olive oil
  8. Sprinkle with the Feta and serve
