Caramelised Honey & Mustard Pork Bangers with Mash

Ingredients

  • 8 pork sausages
  • 11/2 tbsp honey
  • 1/2 tbsp wholegrain mustard
  • 1/2 tbsp olive oil
  • 1/2 tbsp lemon juice.For the Mash Potato: 500g mashed potato
  • 30g butter
  • Flippen Lekka Spice to taste
  • 50ml milk. For the gravy: 1 finely sliced red onion
  • 20g butter
  • 1/2 tbsp olive oil
  • 2 tsp sugar
  • 1 tbsp balsamic vinegar
  • juices from the sausages
  • 250ml brown gravy(we use Bisto)

Method

  1. Heat the oven to 180 degrees C
  2. Mix the sausages with the honey, mustard, olive oil and lemon juice and roast in a pre-heated oven for 30-40minutes until they are golden brown
  3. In the meanwhile, cook the potatoes in boiling salted water for about 30 minutes until cooked through
  4. Heat the butter and the oil in a separate pan and fry the onion on low heat until soft
  5. Add the sugar and the vinegar and simmer until the liquid has been absorbed and the onions are sticky
  6. Add the gravy and simmer on a low heat
  7. When the potatoes are cooked, drain them and return to the pot
  8. Mash with the butter, milk and Flippen Lekka Spice and when smooth and fluffy return to a low heat and beat vigorously 2 minutes until smooth
  9. Remove the sausages and pour the excess juices into the gravy and stir well
  10. Season the gravy with Flippen Lekka Spice to taste
  11. Plate all the ingredients and enjoy
