Green Bean Buttermilk Soup

Ingredients

  • 3 Cups green beans stemmed and cut in half
  • 4 cups chopped Potatoes cooked and cut in chunks
  • 1 cup Chicken Stock
  • 2 cups Buttermilk
  • 2 teasp fresh grated Ginger
  • Flippen Lekka Spice to taste
  • Hot sauce like Tobasco (if desired)

Method

  1. Add the potatoes and ginger to the stock and cook until they are soft
  2. Lift out the potatoes and puree in blender
  3. Add the green beans to the stock and cook until just tender
  4. Add the buttermilk and pureed potatoes and bring back to a simmer
  5. Add Flippen Lekka Spice and crushed black pepper to taste, as well as the hot sauce if desired
  6. Add Garnish and serve hot
