Creamy Curried Baby Potatoes

Ingredients

  • 1kg cooked Baby potatoes
  • 1/2 can chopped tomatoes
  • 1 medium sized onion chopped
  • 1/4 cup finely chopped coriander
  • small piece of fresh ginger
  • 2 garlic cloves crushed
  • 1/2 cup cashews
  • 1/2 can coconut milk
  • 6 dried red chillies
  • 2 teaspoons of medium curry powder
  • 1 teaspoon of mustard seeds
  • 1/2 tsp of turmeric
  • Flippen Lekka Spice to taste

Method

  1. Fry onion and garlic in a little olive oil
  2. Add the ginger, cashews, chillies, curry, mustard seeds and turmeric and fry together for 3 mins
  3. Add the coconut milk and tomatoes and combine with the boiled potatoes and simmer for 5 mins
  4. Add Flippen Lekka Spice to taste
