Sweet Chilli Prawn Skewers

Ingredients

  • 16 large raw prawns, peeled and deveined
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 limes
  • 2 tbsp chopped fresh coriander
  • pinch of chilli flakes
  • Flippen Lekka Spice to taste
  • 4 wooden skewers soaked in water

Method

  1. Mix the olive oil, garlic, soy sauce, honey, the zest and juice of 1 lime, coriander, chilli and Flippen Lekka Spice
  2. Pour it over the prawns and toss well
  3. Cover and marinate in the fridge for 30 minutes
  4. Cut the other lime into quarters
  5. Thread 4 prawns and 1 lime wedge onto each skewer
  6. Barbecue directly over medium heat for 4-5 minutes, turning halfway and brushing with the remaining marinade
  7. Serve with a tomato & herb salad
