Baked Avo Breakfast Boats

Ingredients

  • 1 large avocado
  • crisp fried bacon pieces
  • 2 small or medium eggs

Method

  1. Cut the avocado in half
  2. Scoop out some of the avo meat in order for the eggs to fit in the holes
  3. Deposit an egg into each half of the avo
  4. Ensure that the avo is level to avoid spillage
  5. Cover with the bacon pieces and place in the oven at 220 degrees C for 15 minutes or until eggs are cooked to your fancy
  6. Add Flippen Lekka Spice to taste
